Five easy ice lolly recipes to keep you cool in the summer heat

We all love an ice lolly on a hot summer’s day.

Today is hotter than most days, mind you – the Met Office has even issued an extreme weather warning.

Over the weekend, many headed to the beach to cool off. But that’s not always an option in the middle of the week.

What always does the trick, though, is an ice cold treat.

So, to help us through the heat, we’ve rounded up some ice lolly recipes to help you keep cool as you unwind. They’re nice and easy, so should be suitable to do with children or after a long day.

If you’re feeling extra lazy, feel free to substitute fresh fruits with smoothies and juices.

There’s also a bonus, boozy recipe at the end for anyone who’s interested.

Before we get going, a reminder to wash all fruit thoroughly before use, and remember that not all homemade ice lollies can last a long time in the freezer.

You will need ice lolly holders, a freezer and some ice lolly sticks for these recipes.

For best results, add sticks when your ice lollies are semi-set.

Orange and mango ice lollies

Ingredients:

  • Three oranges
  • One large carrot
  • One mango
  • 2 tbsp of coconut milk (scraped from the top of a can of coconut milk)
  • 1/2 tsp of cinnamon

Strawberry and banana ice lollies

Ingredients

  • One small, very ripe banana
  • 200g strawberries
  • 1 1/2 tbsp of honey or agave nectar
  • 75ml natural yoghurt

Ingredients

  • 1L Cawston Press Apple and Ginger Juice
  • Bottlegreen Elderflower Cordial

Gluten and dairy free raspberry mint ice lollies

Ingredients

  • 200g fresh raspberries
  • 2 tbsp honey (you can substitute for agave or maple syrup if you are vegan)
  • 50ml water
  • 6-7 fresh mint leaves

Pineapple and tequila ice lollies

Ingredients

  • 384g of fresh pineapple cut into chunks
  • 1/2 lime zest
  • 59ml of fresh lime juice
  • 2 pinches of sea salt
  • 2 tsp caster sugar
  • 2 tbsp freshly chopped mint
  • 78ml of tequila
  • 2 tbsp of Cointreau or triple sec
