With the second lockdown fast-approaching, it’s highly likely lots more of us will turn to baking to soothe our anxiety.
So, it’s time to stock up on some brilliant recipes to see you through the next month and if you’re looking to step away from banana breads and sourdough loaves this lockdown, we have just the thing.
A mum has shared her own version of an Aldi scone recipe which involves just four ingredients, including a rather rogue one… lemonade.
Posting on the Facebook group Aldi Mums, the Australian woman wrote: ‘Seeing as Sunday is my grocery day, and I usually do some baking for school lunches, I thought I’d share this super simple, four ingredient scone recipe.’
She explains that her DIY version costs more than half the price of supermarket packs and makes 15 scones in total, adding: ‘Based on weight of ingredients used, these came to a total £1.12.
‘I’ve seen 4-6 packs of scones in other shops going for £2.25.’
The mum also stressed that the recipe could easily be altered depending on what ingredients a baker has or can get their hands on at the supermarket.
She added: ‘Other variations I’ve made – white chocolate and dried cranberry, sultana, chocolate chip.
‘Orange zest and chocolate chip would be nice. Or maybe some dried apple and cinnamon.’

- 385g self raising flour
- 130g dates
- 236ml cream
- 236ml lemonade
- An egg for washing
- Jam and cream to serve
1. Measure out the ingredients.
2. Stir them together in a bowl.
3. Flatten into a dough and cut into 15 circles.
4. Brush the top with egg.
5. Bake at 220°C for 20 minutes.
6. Serve with jam and cream.
